Ingredients

  • 3 cups dried unsweetened coconut flakes
  • 2 tablespoons chia seeds
  • 1 cup cacao powder
  • ½ cup almond meal
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cardamom
  • teaspoon ground cloves
  • a couple twists black pepper
  • ¼ cup water
  • ¾ cup maple syrup
  • cup extra virgin coconut oil, lightly warmed to liquify
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat the oven to 200°F.
  2. In a large bowl, mix together the coconut, chia seeds, cacao powder, almond meal, sea salt, spices, and water until combined.
  3. Add the maple syrup, coconut oil, and vanilla extract, stirring until fully combined and no dry ingredients remain.
  4. Cover the mixture and refrigerate for about 15 minutes to allow the chia seeds to bind the mixture.
  5. Drop heaped tablespoonfuls of the mixture onto a parchment-lined baking sheet.
  6. Bake in the oven for about 2 hours or until the macaroons are firm and dry on the outside.
