Tomato, Basil, and Bacon Pappardelle

Ingredients

The pasta

  • 4 oz dry Pappardelle Noodles
  • 1/2 cup reserved Pasta Water

The sauce

  • 2 strips Bacon
  • 1 tbsp Olive Oil
  • 1 cup Cherry Tomatoes
  • 1/2 tsp Red Pepper Flakes
  • 2 cloves Garlic
  • 1/3 cup Half & Half
  • 1/4 cup fresh Basil Leaves
  • 1/4 cup grated Parmesan
  • Salt to taste
  • Cracked Black Pepper to taste

Instructions

  1. Cut the bacon into small pieces and the cherry tomatoes in half.
  2. Mince the garlic and slice the basil into thin strips.
  3. Cook the bacon in a non-stick pan over medium heat for 4-5 minutes until partially cooked.
  4. Add olive oil, cherry tomatoes, salt, and red pepper flakes to the pan and cook for 8-10 minutes until crispy.
  5. Boil the pappardelle noodles in salted water according to package directions, minus one minute.
  6. Lower the heat and stir in the garlic, cooking for one minute.
  7. Pour in the half and half, stirring until creamy.
  8. Transfer the cooked noodles to the pan, leaving pasta water in the pot.
  9. Add basil and parmesan, tossing to combine.
  10. Add reserved pasta water for creaminess, and season with salt and pepper to taste.
  11. Serve hot.
