Sausage and Marsala Pappardelle Pasta

Instructions
- 1. Boil a large pot of salted water and cook the pappardelle pasta until al dente, then drain and reserve ½ cup of pasta water.
- 2. In a skillet, heat olive oil over medium-high heat and sauté the red bell pepper and onion for 4-5 minutes until softened.
- 3. Add the mushrooms and cook for another 3 minutes, then stir in the garlic, turkey sausage, and red pepper flakes, cooking until warmed through.
- 4. Pour in the cream, marsala, tomatoes, and rosemary, cooking until the sauce thickens and the tomatoes soften.
- 5. Fold the cooked pasta into the skillet until well coated, adding reserved pasta water or more cream for a saucier consistency.
- 6. Garnish with parmesan, kosher salt, and additional rosemary if desired, then serve immediately.
