Sausage and Marsala Pappardelle Pasta

Ingredients

The pasta

  • 8 ounces pappardelle pasta

The sauce

  • 1 tablespoon olive oil
  • 1 unit red bell pepper, sliced
  • 1 unit onion, thinly sliced
  • 4 links smoked turkey sausage, sliced
  • 3 cloves garlic, minced
  • 6 large mushrooms, sliced
  • a pinch red pepper flakes
  • ½ cup cherry tomatoes
  • 1 tablespoon fresh rosemary
  • 1 cup cream
  • ½ cup sweet marsala wine
  • to taste kosher salt
  • to taste parmesan cheese for garnish

Instructions

  1. 1. Boil a large pot of salted water and cook the pappardelle pasta until al dente, then drain and reserve ½ cup of pasta water.
  2. 2. In a skillet, heat olive oil over medium-high heat and sauté the red bell pepper and onion for 4-5 minutes until softened.
  3. 3. Add the mushrooms and cook for another 3 minutes, then stir in the garlic, turkey sausage, and red pepper flakes, cooking until warmed through.
  4. 4. Pour in the cream, marsala, tomatoes, and rosemary, cooking until the sauce thickens and the tomatoes soften.
  5. 5. Fold the cooked pasta into the skillet until well coated, adding reserved pasta water or more cream for a saucier consistency.
  6. 6. Garnish with parmesan, kosher salt, and additional rosemary if desired, then serve immediately.
