Smoky Chickpea, Cabbage & Lentil Stew with Kale

Ingredients

The base

  • 2 tablespoons avocado or olive oil
  • 1 medium yellow onion
  • 2 medium carrots
  • ½ teaspoon smoked paprika
  • 1 tablespoon fresh thyme leaves
  • 3 cloves garlic
  • 2 tablespoons tomato paste
  • sea salt and ground black pepper to taste

The main ingredients

  • ¾ cup French or brown lentils
  • 4 cups finely chopped green cabbage
  • 1 15-oz can chickpeas
  • 1 28-oz can crushed tomatoes
  • 6 cups vegetable stock
  • 2 cups chopped kale

Seasoning

  • 2 teaspoons gluten-free tamari soy sauce
  • 3-4 drops liquid smoke (optional)

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Sauté onions and carrots until soft, about 5 minutes.
  3. Add paprika, thyme, and garlic; cook until fragrant.
  4. Stir in tomato paste and season with salt and pepper.
  5. Add lentils, cabbage, and chickpeas; coat with spices.
  6. Add crushed tomatoes and vegetable stock; stir well.
  7. Bring to a boil, then reduce heat and simmer uncovered for about 25 minutes until lentils are tender.
  8. Stir in kale and cook until bright green, about 1 minute.
  9. Add tamari and liquid smoke; adjust seasoning if needed.
  10. Serve hot.
