Instructions
- Heat oil in a large pot over medium heat.
- Sauté onions and carrots until soft, about 5 minutes.
- Add paprika, thyme, and garlic; cook until fragrant.
- Stir in tomato paste and season with salt and pepper.
- Add lentils, cabbage, and chickpeas; coat with spices.
- Add crushed tomatoes and vegetable stock; stir well.
- Bring to a boil, then reduce heat and simmer uncovered for about 25 minutes until lentils are tender.
- Stir in kale and cook until bright green, about 1 minute.
- Add tamari and liquid smoke; adjust seasoning if needed.
- Serve hot.
