Chicken Chili with Pumpkin

Instructions
- Prepare ingredients by cutting pumpkin into cubes, and chopping onion, celery, and carrots. Mince garlic.
- Heat oil and butter in a pot, cook pumpkin until browned.
- Add garlic, onion, celery, and carrots, cook until fragrant.
- Add seasonings: salt, pepper, thyme, oregano, paprika, chipotle, and cumin.
- Add ground chicken, cook until browned.
- Pour in chicken broth, add tomatoes and beans, stir and bring to boil.
- Cover and simmer for 20-30 minutes until thickened.
- Stir in cream, adjust salt, and serve hot with toppings.
