Chicken Chili with Pumpkin

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • ½ small pumpkin with skin, seeded
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1 tbsp smoked paprika
  • 1 tbsp ground cumin
  • 1 tsp salt
  • black pepper
  • chipotle pepper flakes
  • 1.5 pounds ground chicken
  • 2 cups chicken broth
  • 1 can (14 oz/400 g) crushed tomatoes
  • 1 can (14 oz/390 g) white beans, drained
  • ½ cup cream, 20% fat

Instructions

  1. Prepare ingredients by cutting pumpkin into cubes, and chopping onion, celery, and carrots. Mince garlic.
  2. Heat oil and butter in a pot, cook pumpkin until browned.
  3. Add garlic, onion, celery, and carrots, cook until fragrant.
  4. Add seasonings: salt, pepper, thyme, oregano, paprika, chipotle, and cumin.
  5. Add ground chicken, cook until browned.
  6. Pour in chicken broth, add tomatoes and beans, stir and bring to boil.
  7. Cover and simmer for 20-30 minutes until thickened.
  8. Stir in cream, adjust salt, and serve hot with toppings.
