Homemade Ricotta Cheese

Instructions
- Prepare a sieve lined with cheesecloth over a large bowl.
- Combine milk and cream in a pot and add salt.
- Heat the mixture over medium heat until it reaches a full boil, stirring frequently.
- Remove from heat and stir in lemon juice, letting it rest for 2 minutes.
- Pour the mixture through the sieve to strain the curds from the whey.
- Let the curds strain for 1 to 60 minutes based on desired thickness, preferably around 10 minutes.
- Transfer the ricotta to the fridge to chill until cold.
