Homemade Ricotta Cheese

Ingredients

  • 7 cups whole milk
  • 1 cup heavy cream
  • ¾ tsp salt
  • 3 Tbsp fresh lemon juice

Instructions

  1. Prepare a sieve lined with cheesecloth over a large bowl.
  2. Combine milk and cream in a pot and add salt.
  3. Heat the mixture over medium heat until it reaches a full boil, stirring frequently.
  4. Remove from heat and stir in lemon juice, letting it rest for 2 minutes.
  5. Pour the mixture through the sieve to strain the curds from the whey.
  6. Let the curds strain for 1 to 60 minutes based on desired thickness, preferably around 10 minutes.
  7. Transfer the ricotta to the fridge to chill until cold.
