Homemade Ricotta Cheese

Instructions
- 1. Heat the milk in a medium pot over medium-low heat until it reaches 180°F.
- 2. Add the lemon juice and salt to the milk, stirring briefly to combine.
- 3. Continue heating until the mixture reaches 200°F.
- 4. Remove from heat and let it sit for 10 minutes to allow curds to form.
- 5. Transfer the mixture to a fine mesh strainer lined with butter muslin or cheese cloth.
- 6. Let the whey drain in the refrigerator until the ricotta reaches your desired thickness.
- 7. Transfer the cheese to an airtight container and store for up to 5 days.
