Instructions
- Slice the chicken breast horizontally into two thinner pieces.
- Sprinkle both sides of the chicken with Italian seasoning, salt, and pepper.
- Heat a large skillet over medium heat and grease it.
- Cook the chicken for 4-6 minutes per side until fully cooked.
- Remove the chicken and keep it warm.
- In the same pan, add chicken broth and cream, and bring to a simmer for 1 minute.
- Lower the heat and add Parmesan, pimientos, basil, salt, and pepper.
- Slice the chicken and serve it over cauliflower rice, topped with the cream sauce.
