Ingredients

The cookies

  • 1 ¾ cups all purpose flour
  • ½ cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • 1 cup sugar
  • ¾ cup unsalted butter
  • 1 large egg

The filling

  • 1 cup powdered sugar
  • 2 tablespoons powdered sugar
  • ¾ cup butter
  • ¾ teaspoon peppermint extract
  • 2 drops red food coloring
  • ½ cup crushed candy canes

Instructions

  1. Whisk together flour, cocoa, and salt in a bowl.
  2. Beat sugar and butter in a large bowl until blended, then add egg.
  3. Mix in dry ingredients and refrigerate the dough for 1 hour.
  4. Preheat the oven to 350°F (176°C) and prepare baking sheets.
  5. Scoop dough into balls and flatten them on the baking sheets.
  6. Bake cookies until they are set, about 11 minutes, then cool on racks.
  7. For the filling, beat powdered sugar and butter, then add peppermint extract and food coloring.
  8. Spread filling on one cookie and top with another, pressing gently.
  9. Roll the edges in crushed candy canes.
