Instructions
- Whisk together flour, cocoa, and salt in a bowl.
- Beat sugar and butter in a large bowl until blended, then add egg.
- Mix in dry ingredients and refrigerate the dough for 1 hour.
- Preheat the oven to 350°F (176°C) and prepare baking sheets.
- Scoop dough into balls and flatten them on the baking sheets.
- Bake cookies until they are set, about 11 minutes, then cool on racks.
- For the filling, beat powdered sugar and butter, then add peppermint extract and food coloring.
- Spread filling on one cookie and top with another, pressing gently.
- Roll the edges in crushed candy canes.
