Ingredients

The cookie dough

  • 1 cup unsalted butter
  • ½ cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon pure peppermint extract
  • 2 cups all purpose flour
  • ¼ teaspoon kosher salt
  • 1 cup toasted almonds, pecans, or walnuts

The topping

  • 6 ounces chopped white chocolate or white chocolate candy melts
  • cup crushed candy canes or peppermint candies

Instructions

  1. 1. Beat the butter, powdered sugar, vanilla, and peppermint extracts until light and fluffy.
  2. 2. Mix in the flour, salt, and nuts until combined, then refrigerate the dough for 30 minutes.
  3. 3. Preheat the oven to 325°F and prepare a baking sheet.
  4. 4. Roll the dough into 1-inch balls and place them on the baking sheet.
  5. 5. Bake for 15-20 minutes until just set but not brown, then cool completely.
  6. 6. Melt the white chocolate and dip the tops of the cookies in it.
  7. 7. Sprinkle with crushed peppermint while the chocolate is still wet.
