Peppermint Snowball Cookies

The topping

peppermint, finely chopped, divided
Instructions
- Preheat the oven to 350° F.
- In a medium bowl, stir together the flour and salt.
- In a stand mixer, beat together the butter, avocado oil, vanilla extract, peppermint extract, and ¾ cup of powdered sugar for 3 minutes on medium speed.
- Add the egg yolk and mix until combined.
- Gradually add the flour mixture on low speed until combined.
- Stir in ¼ cup of the chopped peppermint.
- Shape the dough into 32 balls using a tablespoon measure and place them on a parchment-lined baking sheet.
- Bake for 12 to 18 minutes until set but not brown.
- Cool on the baking sheet for 4 minutes, then transfer to a wire rack to cool completely.
- In a bowl, combine the remaining ¼ cup powdered sugar and peppermint.
- Roll the cooled cookies in the sugar mixture to coat.
