Peppermint Snowball Cookies

Ingredients

The cookie dough

  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter at room temperature
  • ¼ cup avocado oil
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • 1 cup powdered sugar, divided
  • 1 large egg yolk

The topping

  • ½ cup peppermint, finely chopped, divided

Instructions

  1. Preheat the oven to 350° F.
  2. In a medium bowl, stir together the flour and salt.
  3. In a stand mixer, beat together the butter, avocado oil, vanilla extract, peppermint extract, and ¾ cup of powdered sugar for 3 minutes on medium speed.
  4. Add the egg yolk and mix until combined.
  5. Gradually add the flour mixture on low speed until combined.
  6. Stir in ¼ cup of the chopped peppermint.
  7. Shape the dough into 32 balls using a tablespoon measure and place them on a parchment-lined baking sheet.
  8. Bake for 12 to 18 minutes until set but not brown.
  9. Cool on the baking sheet for 4 minutes, then transfer to a wire rack to cool completely.
  10. In a bowl, combine the remaining ¼ cup powdered sugar and peppermint.
  11. Roll the cooled cookies in the sugar mixture to coat.
