High Protein Sheet Pan Pancakes

Ingredients

The batter

  • 2 cups all purpose flour
  • tbsp baking powder
  • tsp ground cinnamon
  • ¼ tsp nutmeg
  • ½ tsp salt
  • cup vanilla protein powder (vegan pea protein)
  • 1 tbsp LAIRD Pumpkin Spice Superfood Creamer
  • cups milk of choice
  • 2 large eggs
  • ¼ cup butter, melted and cooled
  • ¼ cup maple syrup
  • 2 cups chopped apple
  • ¼ cup white chocolate chips (optional)

For the pan

  • 1 tbsp softened butter

Instructions

  1. Preheat the oven to 425°F.
  2. Line a medium sheet pan with parchment paper and grease it with softened butter or cooking spray.
  3. In a large bowl, mix the dry ingredients: flour, baking powder, cinnamon, nutmeg, salt, and protein powder.
  4. In a separate bowl, whisk together the milk, eggs, melted butter, and maple syrup.
  5. Combine the wet and dry ingredients until just mixed; if too thick, add more milk.
  6. Gently fold in the chopped apples.
  7. Pour the batter onto the prepared baking sheet and sprinkle with white chocolate chips if desired.
  8. Bake for 10-15 minutes until springy and a toothpick comes out clean.
  9. Cool for 5-10 minutes before slicing into portions.
