Crispy Tofu Super Food Fried Rice

Ingredients

The rice

  • 1 cup brown rice and quinoa blend

The vegetables

  • 1 cup edamame, shelled and frozen
  • 1 cup mixed vegetables, frozen
  • 2 tbsp teriyaki sauce, organic
  • 2 tbsp tamari or soy sauce
  • 3 tsp sesame oil
  • 2 tbsp avocado oil, divided
  • sesame seeds garnish
  • scallions garnish

The protein

  • 14 oz extra firm tofu, cubed and drained
  • 4 tbsp corn starch

Instructions

  1. Cook the rice blend according to package instructions.
  2. While the rice is cooking, heat a nonstick skillet with ½ tbsp of avocado oil until hot.
  3. Drain and cube the tofu, pressing it between paper towels to remove moisture.
  4. Once the rice is cooked, transfer it to a bowl and place it in the freezer to firm up.
  5. Coat the tofu with corn starch in a zip-top bag.
  6. Add the tofu to the hot pan in a single layer and allow it to brown on both sides.
  7. Remove the tofu from the pan and toss it with teriyaki sauce.
  8. Return the pan to heat with the remaining avocado oil and add the frozen vegetables, cooking until thawed.
  9. Add the rice to the pan with the vegetables and create a well in the center.
  10. Pour sesame oil into the well, pressing the rice down to brown it.
  11. Once the rice begins to brown, toss it with the tofu and garnish with sesame seeds and scallions.
