Crispy Tofu Super Food Fried Rice

extra firm tofu, cubed and drained

Instructions
- Cook the rice blend according to package instructions.
- While the rice is cooking, heat a nonstick skillet with ½ tbsp of avocado oil until hot.
- Drain and cube the tofu, pressing it between paper towels to remove moisture.
- Once the rice is cooked, transfer it to a bowl and place it in the freezer to firm up.
- Coat the tofu with corn starch in a zip-top bag.
- Add the tofu to the hot pan in a single layer and allow it to brown on both sides.
- Remove the tofu from the pan and toss it with teriyaki sauce.
- Return the pan to heat with the remaining avocado oil and add the frozen vegetables, cooking until thawed.
- Add the rice to the pan with the vegetables and create a well in the center.
- Pour sesame oil into the well, pressing the rice down to brown it.
- Once the rice begins to brown, toss it with the tofu and garnish with sesame seeds and scallions.
