Easy Vegan Broccoli Cheddar Soup

Instructions
- Sauté the onions and salt with oil or broth until soft.
- Add the broccoli and carrots and sauté until they begin to soften.
- Add the broth and milk, cover, and simmer until the vegetables are soft.
- Stir in the cheese sauce and mix well.
- Use an immersion blender to puree the soup to your desired texture.
- Stir in the shredded cheese if using.
- Serve with toppings of choice.
