Instructions
- Combine all spices for the spice blend in a small bowl.
- Heat olive oil in a large pot over medium heat and preheat the oven to 375°F.
- Season chicken thighs with salt and pepper, then cook skin side down for 4-5 minutes per side until browned.
- Remove chicken from the pot and add sliced onion; cook until softened, then add minced garlic and cook briefly.
- Stir in the spice blend and flour, cooking for 30 seconds before adding chicken broth and seasoning with salt and pepper.
- Return chicken to the pot, add raisins, cover, and bake for 25-30 minutes until chicken is tender.
- Remove from oven, stir in olives and lemon juice, and sprinkle with cilantro before serving.
