Ingredients

Spice Blend

  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground coriander
  • ¼ teaspoon ground turmeric

Chicken and Sauce

  • 1 tablespoon olive oil
  • 6 pieces bone-in, skin-on chicken thighs
  • to taste salt
  • to taste pepper
  • 1 medium onion (halved and sliced)
  • teaspoons minced garlic
  • 2 tablespoons all purpose flour
  • cups chicken broth
  • ¼ cup golden raisins
  • ½ cup pitted green olives
  • 2 teaspoons lemon juice
  • ¼ cup chopped cilantro leaves

Instructions

  1. Combine all spices for the spice blend in a small bowl.
  2. Heat olive oil in a large pot over medium heat and preheat the oven to 375°F.
  3. Season chicken thighs with salt and pepper, then cook skin side down for 4-5 minutes per side until browned.
  4. Remove chicken from the pot and add sliced onion; cook until softened, then add minced garlic and cook briefly.
  5. Stir in the spice blend and flour, cooking for 30 seconds before adding chicken broth and seasoning with salt and pepper.
  6. Return chicken to the pot, add raisins, cover, and bake for 25-30 minutes until chicken is tender.
  7. Remove from oven, stir in olives and lemon juice, and sprinkle with cilantro before serving.
