The yogurt base

Instructions
- Combine cashew milk, blended water with almond butter, honey or coconut sugar, and stevia in a pot.
- Bring the mixture to a simmer, being careful not to let it boil over.
- Reduce heat and whisk while simmering for about 4 minutes, then turn off the heat.
- Dissolve gelatin (or agar powder) in boiling water and whisk it into the mixture.
- If using gelatin, place the bowl in a larger bowl of cold water to cool it down to about 92°F.
- Add the contents of the probiotic capsules and whisk well.
- Pour the mixture into jars and keep warm for about 15 hours.
- If there's a clear pool at the bottom, shake the jars to mix before refrigerating.
- Refrigerate for 8 hours before serving.
