Ingredients

The yogurt base

  • 4 cups cashew milk
  • 2 cups water
  • 1 tbsp almond butter
  • 1 tbsp honey or coconut sugar
  • 1/8 to 1/4 tsp chocolate raspberry liquid stevia

The thickener

  • 1 tbsp gelatin (or 1.5 tsp agar powder)
  • 1/2 cup boiling water

The probiotics

  • 9 capsules probiotic capsules

Instructions

  1. Combine cashew milk, blended water with almond butter, honey or coconut sugar, and stevia in a pot.
  2. Bring the mixture to a simmer, being careful not to let it boil over.
  3. Reduce heat and whisk while simmering for about 4 minutes, then turn off the heat.
  4. Dissolve gelatin (or agar powder) in boiling water and whisk it into the mixture.
  5. If using gelatin, place the bowl in a larger bowl of cold water to cool it down to about 92°F.
  6. Add the contents of the probiotic capsules and whisk well.
  7. Pour the mixture into jars and keep warm for about 15 hours.
  8. If there's a clear pool at the bottom, shake the jars to mix before refrigerating.
  9. Refrigerate for 8 hours before serving.
