Ingredients

The yogurt base

  • ¼ cup Almonds
  • 2 cups Water
  • 2 cups Heavy cream
  • ½ tbsp Gelatin powder
  • ¼ tsp Liquid sunflower lecithin (optional)
  • 2 capsules Probiotic capsules

Optional toppings

  • to taste Hemp hearts
  • to taste Sliced almonds
  • to taste Coconut chips
  • to taste Berries (raspberries, blueberries, strawberries)
  • to taste Sugar-free jam

Instructions

  1. Sterilize two 16-oz jars.
  2. Make almond milk by blending almonds and water, then strain.
  3. Heat the almond milk and cream in a saucepan until bubbles form.
  4. Add gelatin and whisk until dissolved.
  5. Remove from heat and stir in sunflower lecithin.
  6. Pour the mixture into jars and let cool to 100-110°F.
  7. Add probiotic powder and stir to combine.
  8. Incubate in a warm place for 12-24 hours.
  9. Refrigerate until cold and thickened.
  10. Stir or blend before serving with toppings.
