Mandarin & Maple Spiced Quinoa

Ingredients

  • 1 cup quinoa, uncooked
  • cup water
  • ½ cup dried apricots, chopped
  • ¼ cup dried cranberries
  • cup toasted almonds
  • 1 tbsp pure maple syrup
  • 1 tbsp mandarin juice
  • ½ cup mandarin slices, from can or fresh
  • 1-2 tbsp pecans, chopped & toasted
  • ½ tbsp extra virgin olive oil
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼-½ tsp sea salt, to taste
  • to taste cinnamon, maple syrup, and sea salt for garnish

Instructions

  1. Combine quinoa, water, cinnamon, nutmeg, sea salt, and mandarin juice in a pot and bring to a boil.
  2. Reduce heat to low and simmer for about 12-13 minutes.
  3. Stir in chopped dried apricots and cranberries, cover, and cook on low for another 5 minutes.
  4. Add olive oil, almonds, and maple syrup, then taste and adjust seasonings if needed.
  5. Gently stir in mandarin oranges.
  6. Serve in a bowl and garnish with chopped pecans, a drizzle of maple syrup, cinnamon, and sea salt.
