Mandarin & Maple Spiced Quinoa

cinnamon, maple syrup, and sea salt for garnish
Instructions
- Combine quinoa, water, cinnamon, nutmeg, sea salt, and mandarin juice in a pot and bring to a boil.
- Reduce heat to low and simmer for about 12-13 minutes.
- Stir in chopped dried apricots and cranberries, cover, and cook on low for another 5 minutes.
- Add olive oil, almonds, and maple syrup, then taste and adjust seasonings if needed.
- Gently stir in mandarin oranges.
- Serve in a bowl and garnish with chopped pecans, a drizzle of maple syrup, cinnamon, and sea salt.
