Ingredients

The salmon

  • 1 1/4 lbs skinless salmon
  • to taste Salt
  • to taste black pepper
  • 1 1/2 tsp chili powder
  • 3/4 tsp ground cumin
  • 1 Tbsp olive oil

The tacos

  • 10 (6-inch) corn tortillas

The slaw

  • 3 cups finely shredded cabbage or coleslaw mix
  • 1/4 cup mayonnaise
  • 1 tsp lime zest
  • 1 1/2 Tbsp lime juice
  • 1 1/2 tsp honey
  • 1/3 cup chopped cilantro
  • 3/4 tsp minced garlic

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season both sides of the salmon with salt, pepper, chili powder, and cumin.
  3. Sear the salmon for about 3 to 4 minutes per side until cooked through, then transfer to a cutting board.
  4. In a mixing bowl, combine cabbage, mayonnaise, lime zest, lime juice, honey, cilantro, and garlic to make the slaw.
  5. Flake the cooked salmon into bite-sized pieces.
  6. Assemble the tacos by layering the warmed tortillas with slaw, salmon, and any desired toppings.
