Ingredients

The salmon and glaze

  • 1 pound salmon
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 2 tablespoons honey
  • ½ teaspoon lime zest
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • 2 tablespoons chopped cilantro

The tacos

  • 8 pieces corn tortillas
  • 1 cup shredded purple cabbage
  • 1 large avocado, diced
  • cup crumbled queso fresco
  • Extra cilantro for garnish

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with aluminum foil.
  2. Whisk together olive oil, lime juice, honey, lime zest, and minced garlic in a small bowl, then season with salt and pepper.
  3. Place the salmon on the foil-lined pan, season with salt and pepper, and spoon the honey lime glaze over it.
  4. Sprinkle chopped cilantro over the salmon and bake for 15 minutes.
  5. Remove the salmon from the foil, discard the skin, and break it into pieces.
  6. Assemble the tacos by placing salmon on corn tortillas and topping with shredded cabbage, avocado, queso fresco, and cilantro.
  7. Serve warm.
