Instructions
- Preheat the oven to 400°F and line a baking sheet with aluminum foil.
- Whisk together olive oil, lime juice, honey, lime zest, and minced garlic in a small bowl, then season with salt and pepper.
- Place the salmon on the foil-lined pan, season with salt and pepper, and spoon the honey lime glaze over it.
- Sprinkle chopped cilantro over the salmon and bake for 15 minutes.
- Remove the salmon from the foil, discard the skin, and break it into pieces.
- Assemble the tacos by placing salmon on corn tortillas and topping with shredded cabbage, avocado, queso fresco, and cilantro.
- Serve warm.
