Instructions
- Preheat oven to 400°F (204°C) and roast the sweet potato until tender.
- Boil water in a saucepan, add oats, and cook until absorbed.
- Mash the roasted sweet potato and measure out ½ cup.
- Stir sweet potato puree, sweetener, cinnamon, and flaxseed into the oats.
- Divide the oats into bowls and top with granola.
- Serve immediately.
