Sweet Potato Pie Oatmeal

Ingredients

The oats

  • 1 cup rolled oats
  • 1 ¾ cups water

The sweet potato mixture

  • ½ cup sweet potato puree
  • 2-3 Tbsp brown sugar, maple syrup, or other sweetener
  • ½ tsp ground cinnamon
  • ½ Tbsp flaxseed meal (optional)

Toppings

  • 3 Tbsp Pumpkin Maple Pecan Granola

Instructions

  1. Preheat oven to 400°F (204°C) and roast the sweet potato until tender.
  2. Boil water in a saucepan, add oats, and cook until absorbed.
  3. Mash the roasted sweet potato and measure out ½ cup.
  4. Stir sweet potato puree, sweetener, cinnamon, and flaxseed into the oats.
  5. Divide the oats into bowls and top with granola.
  6. Serve immediately.
