Instructions
- 1. In a medium pot, combine oats, non-dairy milk, chia seeds, and salt. Bring to a boil and then reduce heat to medium.
- 2. Stir in the grated sweet potato and water, cooking on medium while stirring often for a few minutes.
- 3. Add cocoa powder and cinnamon, ensuring there are no clumps.
- 4. Once thickened, stir in vanilla and maple syrup, then remove from heat.
- 5. Serve in a bowl and top with dark chocolate, granola, and sweet potato shreds as desired.
