Ingredients

The salad mixture

  • 2 cans (15 oz) chickpeas
  • ¼ cup tahini
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • ½ tsp lemon zest
  • 1 medium garlic clove
  • to taste salt
  • to taste black pepper
  • ½ medium red bell pepper
  • ½ cup diced celery
  • cup chopped red onions
  • 3 Tbsp chopped fresh parsley

The bread

  • 10 slices thin wholegrain bread

Instructions

  1. Pulse together ½ cup chickpeas, tahini, olive oil, lemon juice, lemon zest, 2 Tbsp reserved chickpea liquid, garlic, salt, and pepper in a food processor until smooth.
  2. Add the remaining chickpeas and pulse several times until partially chopped.
  3. In a mixing bowl, combine the chickpea mixture with bell pepper, celery, red onion, parsley, and adjust with more chickpea liquid if needed. Season to taste.
  4. Serve the mixture between slices of bread with desired toppings.
