Chickpea Salad Sandwich

Instructions
- Pulse together ½ cup chickpeas, tahini, olive oil, lemon juice, lemon zest, 2 Tbsp reserved chickpea liquid, garlic, salt, and pepper in a food processor until smooth.
- Add the remaining chickpeas and pulse several times until partially chopped.
- In a mixing bowl, combine the chickpea mixture with bell pepper, celery, red onion, parsley, and adjust with more chickpea liquid if needed. Season to taste.
- Serve the mixture between slices of bread with desired toppings.
