Ingredients

The salad

  • ¼ teaspoon ground black pepper
  • ¼ cup diced red onion
  • 2 ribs celery, diced
  • 2 tablespoons fresh minced dill (optional)

For serving

  • sliced bread
  • sliced red onion
  • sliced tomatoes
  • lettuce

Instructions

  1. In a large bowl, mash the avocado, mustard, lemon juice, salt, and pepper together until creamy.
  2. Add the drained chickpeas, red onion, celery, and dill to the bowl and mix well, mashing some chickpeas as desired.
  3. Taste the mixture and adjust the seasoning if necessary.
  4. Serve the chickpea salad as a sandwich filling or in lettuce wraps with your choice of toppings.
