Ingredients

The salad filling

  • 1 ½ cups chickpeas, drained and rinsed
  • 1 whole avocado, sliced
  • 2 tablespoons vegan mayo
  • Juice of 1 lemon
  • 1 teaspoon maple syrup
  • 1 teaspoon Sriracha
  • 1 cup diced red onion
  • 3 ribs celery, chopped
  • 2 tablespoons chopped fresh dill
  • ¾ cup smoky almonds or regular almonds

For serving

  • 12 slices bread (gluten-free if desired)
  • to taste lettuce or sprouts
  • to taste tomato

Instructions

  1. Toast the bread.
  2. In a medium bowl, mash the chickpeas and avocado together.
  3. Add vegan mayo, lemon juice, maple syrup, and Sriracha, and mix until well combined.
  4. Stir in the diced red onion, chopped celery, dill, and almonds.
  5. Spread the chickpea mixture on one slice of toasted bread.
  6. Top with lettuce or sprouts and tomato, then place another slice of bread on top.
