Instructions
- Toast the bread.
- In a medium bowl, mash the chickpeas and avocado together.
- Add vegan mayo, lemon juice, maple syrup, and Sriracha, and mix until well combined.
- Stir in the diced red onion, chopped celery, dill, and almonds.
- Spread the chickpea mixture on one slice of toasted bread.
- Top with lettuce or sprouts and tomato, then place another slice of bread on top.
