Instructions
- Mash the chickpeas in a large mixing bowl, leaving some whole.
- Add the avocado, chopped veggies, pickles, and seasonings, then mix well.
- Assemble the sandwich by placing the chickpea salad on toasted bread and add spinach and grated carrot if desired.
