Ingredients

The filling

  • 2 medium avocados
  • 2 15 ounce cans chickpeas
  • 1 tablespoon lemon juice
  • ½ teaspoon ground mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon coarse salt
  • ½ cup red onion
  • ¼ cup celery
  • ¼ cup carrot
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds

For serving

  • 10 slices bread
  • to taste lettuce, tomato, onion

Instructions

  1. Mash the chickpeas and avocados in a bowl with lemon juice, ground mustard, garlic powder, and salt until mostly broken down.
  2. Stir in the chopped onion, celery, carrot, pumpkin seeds, and sunflower seeds until well combined.
  3. Taste and adjust seasoning as needed.
  4. Spread about ½ cup of the chickpea avocado salad on bread and add any additional sandwich toppings.
