Instructions
- Mash the chickpeas and avocados in a bowl with lemon juice, ground mustard, garlic powder, and salt until mostly broken down.
- Stir in the chopped onion, celery, carrot, pumpkin seeds, and sunflower seeds until well combined.
- Taste and adjust seasoning as needed.
- Spread about ½ cup of the chickpea avocado salad on bread and add any additional sandwich toppings.
