Almond Butter Cookie Dough Cups

Instructions
- Melt ¼ cup of chocolate chips in the microwave for 30 seconds, stirring and microwaving for another 10 seconds if needed.
- Add 1 tsp of oil to the melted chocolate and stir until smooth.
- Pour ⅓ of the melted chocolate into a silicone muffin liner, rotating to cover the sides ⅔ of the way up, and place in the fridge to harden.
- Repeat the melting process for the other two liners.
- Blend all cookie dough filling ingredients in a food processor or blender until smooth.
- Once the chocolate base is hard, place 1 Tbsp of cookie dough into each chocolate base.
- Melt the remaining ¼ cup chocolate chips with 1 tsp oil and pour evenly over the cookie dough filled cups.
- Tap the cups gently on a hard surface to even out the top and place in the fridge to harden completely.
