Almond Butter Cookie Dough Cups

Ingredients

Chocolate Cup

  • ½ cup chocolate chips
  • 2 tsp oil of choice

Cookie Dough Filling

  • 6 dates, pitted
  • 2 Tbsp old fashioned rolled oats
  • 2 Tbsp milk of choice
  • Tbsp almond butter
  • 1 Tbsp butter (regular, light, or vegan)
  • ½ tsp almond extract
  • pinch salt

Instructions

  1. Melt ¼ cup of chocolate chips in the microwave for 30 seconds, stirring and microwaving for another 10 seconds if needed.
  2. Add 1 tsp of oil to the melted chocolate and stir until smooth.
  3. Pour ⅓ of the melted chocolate into a silicone muffin liner, rotating to cover the sides ⅔ of the way up, and place in the fridge to harden.
  4. Repeat the melting process for the other two liners.
  5. Blend all cookie dough filling ingredients in a food processor or blender until smooth.
  6. Once the chocolate base is hard, place 1 Tbsp of cookie dough into each chocolate base.
  7. Melt the remaining ¼ cup chocolate chips with 1 tsp oil and pour evenly over the cookie dough filled cups.
  8. Tap the cups gently on a hard surface to even out the top and place in the fridge to harden completely.
  9. Enjoy your delicious masterpiece!
