Instructions
- Preheat the waffle iron and prepare the flax egg by mixing flaxseed meal with water and letting it rest for 5 minutes.
- In a large bowl, combine molasses, pumpkin puree, avocado oil, and brown sugar, then whisk together.
- Stir in the almond milk and mix well.
- Sift the flour, baking powder, cinnamon, and ginger over the wet ingredients and stir until just combined. Let the batter rest for 5 minutes.
- Spray the waffle iron with non-stick cooking spray and pour about ½ cup of batter into the center.
- Cook according to your waffle iron's instructions, preferably on the darkest setting for extra crispiness.
- Once cooked, remove the waffles and place them on a cooling rack to prevent sogginess.
- Serve warm with vegan butter and maple syrup or your preferred toppings.
