Ingredients

  • 1 Tbsp flaxseed meal
  • 2 ½ Tbsp water
  • 2 Tbsp molasses
  • ¼ cup pumpkin puree
  • 1 Tbsp avocado oil
  • scant cup brown sugar
  • 1 scant cup unsweetened almond milk
  • 1 ¼ cup whole-wheat pastry flour
  • ½ Tbsp baking powder
  • 1 tsp cinnamon
  • 1 tsp ginger

Instructions

  1. Preheat the waffle iron and prepare the flax egg by mixing flaxseed meal with water and letting it rest for 5 minutes.
  2. In a large bowl, combine molasses, pumpkin puree, avocado oil, and brown sugar, then whisk together.
  3. Stir in the almond milk and mix well.
  4. Sift the flour, baking powder, cinnamon, and ginger over the wet ingredients and stir until just combined. Let the batter rest for 5 minutes.
  5. Spray the waffle iron with non-stick cooking spray and pour about ½ cup of batter into the center.
  6. Cook according to your waffle iron's instructions, preferably on the darkest setting for extra crispiness.
  7. Once cooked, remove the waffles and place them on a cooling rack to prevent sogginess.
  8. Serve warm with vegan butter and maple syrup or your preferred toppings.
