Ingredients

  • 1 cup soy milk or any vegan milk
  • 2 teaspoons apple cider vinegar or lemon juice
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon sea salt
  • 1 tablespoon granulated sugar
  • 1 tablespoon vegan butter or oil
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground cloves or allspice
  • ¼ teaspoon nutmeg
  • 2 tablespoons sugar cane molasses

Instructions

  1. Make the buttermilk by whisking the soy milk and vinegar or lemon juice, then let it sit for 5 minutes.
  2. Sift the flour, baking powder, and salt into a large mixing bowl.
  3. Add the sugar, melted vegan butter or oil, spices, molasses, and buttermilk to the dry ingredients, and gently mix until just combined.
  4. Heat a griddle or skillet over medium heat and brush with coconut oil or vegan butter.
  5. Pour about ¼ cup of batter onto the griddle for each pancake and cook until bubbles form, then flip and cook for another 2-3 minutes.
  6. Repeat until all the batter is used and serve hot with powdered sugar or maple syrup.
