Vegan Gingerbread Pancakes

Instructions
- Make the buttermilk by whisking the soy milk and vinegar or lemon juice, then let it sit for 5 minutes.
- Sift the flour, baking powder, and salt into a large mixing bowl.
- Add the sugar, melted vegan butter or oil, spices, molasses, and buttermilk to the dry ingredients, and gently mix until just combined.
- Heat a griddle or skillet over medium heat and brush with coconut oil or vegan butter.
- Pour about ¼ cup of batter onto the griddle for each pancake and cook until bubbles form, then flip and cook for another 2-3 minutes.
- Repeat until all the batter is used and serve hot with powdered sugar or maple syrup.
