Whole Wheat Gingerbread Pancakes

Ingredients

  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground ginger
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup milk of choice
  • 1 large egg
  • 3 tablespoons unsulphured molasses
  • 2 tablespoons maple syrup or coconut sugar or brown sugar
  • 2 tablespoons melted butter or coconut oil
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat an electric griddle to 350°F or a stovetop pan over medium-low heat.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking powder, ginger, cinnamon, nutmeg, and salt.
  3. In a smaller bowl, combine the wet ingredients: milk, egg, molasses, maple syrup, butter, and vanilla extract, and whisk until well combined.
  4. Pour the wet mixture into the dry ingredients and stir until just incorporated, avoiding large lumps.
  5. Pour ⅓ cup of batter onto the heated pan and cook until the edges are no longer shiny, then flip and cook until golden brown.
  6. Serve immediately or keep warm in an oven set to 200°F, repeating with the remaining batter.
