Instructions
- Preheat an electric griddle to 350°F or a stovetop pan over medium-low heat.
- In a medium bowl, whisk together the dry ingredients: flour, baking powder, ginger, cinnamon, nutmeg, and salt.
- In a smaller bowl, combine the wet ingredients: milk, egg, molasses, maple syrup, butter, and vanilla extract, and whisk until well combined.
- Pour the wet mixture into the dry ingredients and stir until just incorporated, avoiding large lumps.
- Pour ⅓ cup of batter onto the heated pan and cook until the edges are no longer shiny, then flip and cook until golden brown.
- Serve immediately or keep warm in an oven set to 200°F, repeating with the remaining batter.
