Ingredients

  • 1 cup all-purpose flour
  • 1 ¼ cups whole wheat flour
  • ¼ cup packed brown sugar
  • 2 tsp baking powder
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs, lightly beaten
  • 1 ½ cups non-fat buttermilk
  • 3 Tbsp unsweetened applesauce

Instructions

  1. Combine all-purpose flour, whole wheat flour, brown sugar, baking powder, spices, baking soda, and salt in a large bowl.
  2. Make a well in the center of the dry ingredients.
  3. In a separate bowl, whisk together eggs, buttermilk, and applesauce, then add to the dry mixture and mix until just combined.
  4. Heat a greased skillet over medium heat.
  5. Spoon about ¼ cup of batter onto the skillet and cook for about 2 minutes on each side until golden brown.
  6. Flip the pancakes when the surface is bubbly and edges are slightly dry.
  7. Serve warm with fresh apple slices and maple syrup.
