Gingerbread Apple Pancakes

Instructions
- Combine all-purpose flour, whole wheat flour, brown sugar, baking powder, spices, baking soda, and salt in a large bowl.
- Make a well in the center of the dry ingredients.
- In a separate bowl, whisk together eggs, buttermilk, and applesauce, then add to the dry mixture and mix until just combined.
- Heat a greased skillet over medium heat.
- Spoon about ¼ cup of batter onto the skillet and cook for about 2 minutes on each side until golden brown.
- Flip the pancakes when the surface is bubbly and edges are slightly dry.
- Serve warm with fresh apple slices and maple syrup.
