Ingredients

The pancakes

The topping

  • 6 ounces reduced-fat cream cheese
  • 3 tablespoons nonfat plain Greek yogurt
  • 3 tablespoons maple syrup
  • ½ teaspoon pure vanilla extract
  • 2-4 tablespoons skim milk

Instructions

  1. Whisk together eggs and brown sugar, then stir in buttermilk and coffee.
  2. In a separate bowl, whisk together the dry ingredients.
  3. Combine the wet and dry ingredients gently, then stir in melted butter.
  4. Heat a skillet over medium-low heat and cook pancakes in desired sizes.
  5. Prepare the maple cream cheese topping by mixing all topping ingredients until smooth.
  6. Serve pancakes warm with the topping.
