Ingredients

The plantains

  • 2 ripe plantains
  • 2 tbsp avocado oil
  • to taste sea salt

The bowl

  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 tbsp avocado oil
  • 1.5 lbs ground pork
  • 1 tsp oregano
  • ¼ tsp cumin
  • ¼ tsp chili powder
  • to taste sea salt and pepper

Toppings

  • 2 avocados, sliced
  • 4 cups greens (spinach, kale, chard, etc.)
  • 1 cup salsa
  • 4 eggs (optional)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Score the plantains lengthwise, peel them, and cut into ¼ inch thick rounds.
  3. Place the plantain rounds on the baking sheet, drizzle with avocado oil, and season with salt.
  4. Bake for 15 minutes, then flip the plantains, season with more salt, and bake for another 10 minutes until browned.
  5. While the plantains are baking, prepare the onion and bell pepper.
  6. Heat a large skillet over medium heat and add oil, onion, and bell pepper. Cook until softened.
  7. Add the ground pork to the skillet, breaking it apart and cooking until browned.
  8. Stir in oregano, cumin, and chili powder, and season with salt and pepper to taste.
  9. Reduce heat to low until the plantains are done.
  10. Slice the avocado and cook the eggs if using.
  11. Assemble the bowls starting with a bed of greens, then add the pork mixture and plantains, and top with avocado, salsa, and optional eggs.
