Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Score the plantains lengthwise, peel them, and cut into ¼ inch thick rounds.
- Place the plantain rounds on the baking sheet, drizzle with avocado oil, and season with salt.
- Bake for 15 minutes, then flip the plantains, season with more salt, and bake for another 10 minutes until browned.
- While the plantains are baking, prepare the onion and bell pepper.
- Heat a large skillet over medium heat and add oil, onion, and bell pepper. Cook until softened.
- Add the ground pork to the skillet, breaking it apart and cooking until browned.
- Stir in oregano, cumin, and chili powder, and season with salt and pepper to taste.
- Reduce heat to low until the plantains are done.
- Slice the avocado and cook the eggs if using.
- Assemble the bowls starting with a bed of greens, then add the pork mixture and plantains, and top with avocado, salsa, and optional eggs.
