Instructions
- Prepare pulled pork according to instructions.
- Score the plantain peels lengthwise and remove them.
- Slice the plantains into 1 inch pieces.
- Heat a skillet over medium heat and add avocado oil.
- Cook the plantain pieces on one side for about 2 minutes until browned, then flip to cook the other side.
- Remove the plantains and let them cool slightly.
- Smash the plantain pieces to flatten them.
- Heat the skillet again and add more avocado oil if needed.
- Cook the flattened plantains for 1-2 minutes per side until browned and crispy.
- Assemble the sliders by placing pulled pork between two pieces of fried plantains.
