Ingredients

The filling

  • 2 cups pulled pork

The buns

  • 2 pieces green plantains
  • 4-6 tbsp avocado oil
  • to taste salt

Instructions

  1. Prepare pulled pork according to instructions.
  2. Score the plantain peels lengthwise and remove them.
  3. Slice the plantains into 1 inch pieces.
  4. Heat a skillet over medium heat and add avocado oil.
  5. Cook the plantain pieces on one side for about 2 minutes until browned, then flip to cook the other side.
  6. Remove the plantains and let them cool slightly.
  7. Smash the plantain pieces to flatten them.
  8. Heat the skillet again and add more avocado oil if needed.
  9. Cook the flattened plantains for 1-2 minutes per side until browned and crispy.
  10. Assemble the sliders by placing pulled pork between two pieces of fried plantains.
