Pulled Pork Sliders with Red Cabbage & Avocado

Ingredients

The pork and seasoning

  • 2–3 lb. pork loin
  • 1 teaspoon course sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dry rosemary

The sauce

  • 15 oz. tomato sauce
  • 4 pieces dates (dried and pitted)
  • ½ cup balsamic vinegar
  • 1 Tablespoon coconut oil, melted
  • 6 cloves garlic (peeled and smashed)

The sliders

  • 24 pieces whole wheat slider buns
  • 4 pieces avocados (sliced)
  • 1 ½ cups purple cabbage (thinly sliced)

Instructions

  1. Combine sea salt, pepper, garlic powder, smoked paprika, and rosemary in a small bowl.
  2. Rub the mixture all over the pork loin and place it in the crock pot.
  3. Add tomato sauce, dates, balsamic vinegar, melted coconut oil, and garlic cloves to the crock pot.
  4. Cook the pork loin on HIGH for 6 hours.
  5. Shred the pork in the crock pot using two forks and mix it with the sauce.
  6. Serve the shredded pork on whole wheat slider buns topped with purple cabbage and avocado slices.
