Ingredients

The Pork Belly

  • 5 pounds pork belly
  • to taste kosher salt
  • to taste freshly cracked black pepper

The Asian Slaw

  • 2 carrots peeled and julienned
  • ½ English cucumber seeded and julienned
  • ½ Fuji apple julienned
  • ½ red onion thinly sliced
  • ¼ cup cilantro
  • ¼ cup rice wine vinegar
  • ¼ cup mirin
  • 1 teaspoon sugar
  • 2 tablespoons light soy sauce
  • pinch red pepper flakes

The Chipotle Mayonnaise

  • cup mayonnaise
  • 1 medium canned chipotle pepper in adobo sauce, finely chopped
  • 1 teaspoon adobo sauce

To Assemble the Sandwiches

  • 1 dozen slider buns or dinner rolls
  • to taste arugula

Instructions

  1. Preheat the oven to 250°F.
  2. Remove the skin from the pork belly and score the fat cap.
  3. Generously coat the pork belly with salt and pepper.
  4. Place the pork belly in a roasting pan, fat side up, and roast for 3 hours.
  5. Increase the oven temperature to 400°F and roast for an additional 30 minutes, basting every 10 minutes.
  6. Remove the pork belly from the oven and let it cool.
  7. Combine all the ingredients for the Asian slaw and refrigerate for at least an hour.
  8. Mix together the chipotle mayonnaise ingredients and chill until ready to use.
  9. Slice the pork belly into ¼-inch slices and reheat if necessary.
  10. Assemble the sliders by slicing the buns, spreading chipotle mayonnaise, and layering arugula, pork belly slices, and Asian slaw.
