The Chipotle Mayonnaise

To Assemble the Sandwiches

Instructions
- Preheat the oven to 250°F.
- Remove the skin from the pork belly and score the fat cap.
- Generously coat the pork belly with salt and pepper.
- Place the pork belly in a roasting pan, fat side up, and roast for 3 hours.
- Increase the oven temperature to 400°F and roast for an additional 30 minutes, basting every 10 minutes.
- Remove the pork belly from the oven and let it cool.
- Combine all the ingredients for the Asian slaw and refrigerate for at least an hour.
- Mix together the chipotle mayonnaise ingredients and chill until ready to use.
- Slice the pork belly into ¼-inch slices and reheat if necessary.
- Assemble the sliders by slicing the buns, spreading chipotle mayonnaise, and layering arugula, pork belly slices, and Asian slaw.
