Southwest BBQ Pork Sliders

Ingredients

The pork

  • 2 ½ pounds pork shoulder or butt
  • 1 can (19 ounces) Old El Paso Enchilada Sauce
  • 12 pieces brioche slider buns
  • 12 slices pepper jack cheese

The guacamole

  • 3 large ripe avocados
  • 1 large or 2 small limes (juiced)
  • 1 leaf large jalapeño (seeded and chopped)
  • cup fresh cilantro (chopped)
  • 1-2 ears grilled corn (kernels removed from the cob)
  • to taste salt

Instructions

  1. Add the pork and enchilada sauce to the crockpot and cook on low for 6-8 hours or on high for 4-5 hours.
  2. Shred the pork in the crockpot and mix with the sauce, discarding any fatty pieces.
  3. Preheat the broiler to high, place slider bun bottoms on a baking sheet, top with pork and a slice of cheese, and broil for 1-2 minutes until cheese melts.
  4. Remove from the oven, add guacamole, and top with the other bun before serving.
