Pork Carnitas Sliders

Ingredients

The Pork

  • 2 lbs. pork shoulder or top loin
  • ½ tsp. salt
  • ½ tsp. pepper
  • ½ Tbsp. cumin
  • ½ Tbsp. oregano
  • ½ Tbsp. paprika
  • 2 Tbsp. olive oil
  • 1 cup white onion, finely chopped
  • 1 Tbsp. garlic, minced
  • ½ Tbsp. jalapeño, minced
  • cup beer
  • cup freshly squeezed orange juice

The Sliders

  • 12-16 slider buns slider buns
  • to taste creamy tex-mex sauce
  • to taste finely chopped onion
  • to taste cilantro

Instructions

  1. Set the slow cooker to low.
  2. Rinse and dry the pork, then season with salt and pepper on both sides.
  3. Mix cumin, oregano, and paprika, then apply half to the pork with olive oil.
  4. Place the seasoned pork in the slow cooker with the fatty side up.
  5. Add jalapeño, garlic, onion, orange juice, and beer.
  6. Cover and cook for eight hours, flipping halfway if possible.
  7. Shred the pork in the slow cooker and let it soak in the juices.
  8. Sear the shredded pork in a pan until crispy.
  9. Serve on slider buns with creamy tex-mex sauce and garnishes.
