Ingredients

The meat

  • 3 lb boneless pork shoulder
  • to taste garlic powder
  • to taste onion powder
  • to taste kosher salt
  • to taste black pepper
  • to taste smoked paprika or liquid smoke

The sauce and toppings

  • 12 oz BBQ sauce
  • 12 high-quality rolls
  • to taste Memphis-style coleslaw
  • to taste thick-cut dill pickle slices

For cooking

  • ½ inch water

Instructions

  1. Rinse the pork roast in cold water and trim excess fat.
  2. Pat the pork dry, then sprinkle with liquid smoke and seasonings.
  3. Place the pork in the slow cooker and add about ½ inch of water.
  4. Cook on low for 8-10 hours.
  5. Once cooked, drain the liquid and shred the pork in the slow cooker.
  6. Mix in enough BBQ sauce to coat the meat without making it soupy.
  7. Heat the mixture through with the lid on.
  8. Serve on sliced rolls topped with coleslaw and dill pickles.
