Ground Beef and Plantain Bowls

Ingredients

Green Sauce

  • 1 whole avocado
  • ½ cup parsley, packed
  • ½ cup cilantro, packed
  • 2 cloves garlic, peeled
  • 1 whole lime, juice of
  • ½ cup olive oil
  • 1 cup water
  • ½ cup sunflower seeds
  • to taste tsp sea salt

Plantains

  • 3 whole plantains
  • 2 tbsp avocado oil
  • to taste tsp sea salt

Main Bowl

  • 2 lbs grass-fed ground beef
  • 1 whole onion, diced
  • 1 tbsp chili powder
  • to taste tsp salt and pepper
  • 8 cups kale, roughly chopped

Instructions

  1. Prepare the green sauce by blending all ingredients except sunflower seeds and sea salt in a food processor until incorporated.
  2. Add sunflower seeds and pulse until smooth, adjusting water for desired consistency and seasoning with salt.
  3. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  4. Score and peel the plantains, then slice them into ¼ inch rounds and place on the baking sheet.
  5. Drizzle with avocado oil and season with salt, then bake for 12 minutes.
  6. Flip the plantains, add more salt, and bake for another 10 minutes until browned.
  7. While the plantains bake, heat a skillet over medium heat and cook the diced onion and ground beef until browned.
  8. Season the beef with chili powder, salt, and pepper, then add kale and cook until wilted.
  9. Serve the beef mixture in bowls topped with plantains and green sauce.
