Instructions
- Prepare the green sauce by blending all ingredients except sunflower seeds and sea salt in a food processor until incorporated.
- Add sunflower seeds and pulse until smooth, adjusting water for desired consistency and seasoning with salt.
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Score and peel the plantains, then slice them into ¼ inch rounds and place on the baking sheet.
- Drizzle with avocado oil and season with salt, then bake for 12 minutes.
- Flip the plantains, add more salt, and bake for another 10 minutes until browned.
- While the plantains bake, heat a skillet over medium heat and cook the diced onion and ground beef until browned.
- Season the beef with chili powder, salt, and pepper, then add kale and cook until wilted.
- Serve the beef mixture in bowls topped with plantains and green sauce.
