Mini Burger Bowls

green plantains, peeled and cut into ¼ inch rounds

Instructions
- Prep the tomato, onion, pickles, and romaine lettuce and set aside.
- Cook the bacon in a large skillet over medium heat until crispy, then remove and set aside.
- Score and peel the plantains, then cut them into ¼ inch thick rounds.
- Form the ground beef into 8 mini burgers of equal size.
- In the same skillet, cook the mini burgers for 5-6 minutes on one side, season with salt and pepper, then flip and cook for another 5-6 minutes, adding onions to the pan.
- In another skillet, heat avocado oil and cook the plantains until golden brown on both sides, seasoning with salt.
- Assemble the mini burger bowls starting with romaine lettuce, then add burgers, bacon, tomato, onion, pickles, plantains, and optional sauerkraut, mayo, and mustard.
