Mini Burger Bowls

Ingredients

The bowls

  • ½ unit tomato, sliced into thin rounds
  • 1 unit onion, thinly sliced
  • 2 unit pickles, sliced lengthwise into thin pieces
  • 2 small heads romaine lettuce, chopped
  • 4 pieces bacon
  • 2 lbs grass-fed ground beef

The cooking ingredients

  • to taste unit salt and pepper
  • 2 tbsp avocado oil
  • 2 green plantains, peeled and cut into ¼ inch rounds
  • 1 cup sauerkraut (optional)
  • ¼ cup Paleo mayo (optional)
  • ¼ cup mustard (optional)

Instructions

  1. Prep the tomato, onion, pickles, and romaine lettuce and set aside.
  2. Cook the bacon in a large skillet over medium heat until crispy, then remove and set aside.
  3. Score and peel the plantains, then cut them into ¼ inch thick rounds.
  4. Form the ground beef into 8 mini burgers of equal size.
  5. In the same skillet, cook the mini burgers for 5-6 minutes on one side, season with salt and pepper, then flip and cook for another 5-6 minutes, adding onions to the pan.
  6. In another skillet, heat avocado oil and cook the plantains until golden brown on both sides, seasoning with salt.
  7. Assemble the mini burger bowls starting with romaine lettuce, then add burgers, bacon, tomato, onion, pickles, plantains, and optional sauerkraut, mayo, and mustard.
