Chipotle Beef Paleo Burger Bowls

Ingredients

The Burger

  • 1 lb grass-fed beef
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tsp chipotle powder
  • 4 pieces bacon
  • 4 eggs eggs

The Vegetables

  • 3 cups mushrooms, diced
  • 4 pieces mini sweet peppers, sliced into strips
  • 4 cups cabbage, shredded

Instructions

  1. Prepare the mushrooms, peppers, and cabbage by cutting and shredding them.
  2. Mix the ground beef with salt, pepper, and chipotle powder, then form into 4 patties.
  3. Cook the bacon in a large pan over medium heat until almost crispy, then remove and drain on paper towels.
  4. Use some of the bacon grease to sauté the mushrooms and peppers in a separate pan.
  5. In the same pan used for the bacon, cook the burger patties for about 4-5 minutes per side.
  6. Sauté the mushrooms and peppers until cooked down, then reduce heat to simmer.
  7. Cook the eggs in a small pan to your desired doneness.
  8. Assemble the bowls with a base of cabbage, topped with a burger patty, sautéed mushrooms, peppers, and an egg.
