Chipotle Bison Burgers

small peppers (sweet mini or banana peppers)

crisp green lettuce (such as romaine)
Instructions
- Cook the bacon in a large pan over medium heat until almost crispy, then remove and place on a paper towel.
- Transfer some bacon grease to a separate medium pan for sautéing the mushrooms and peppers, leaving 1 tbsp in the pan for the burgers.
- In a bowl, mix the salt, pepper, chipotle powder, and ground bison until fully combined, then form into four patties.
- In the large pan, cook the burger patties for about 4 minutes on each side for medium doneness.
- In the medium pan, sauté the mushrooms and peppers until the peppers are browned and the mushrooms are cooked down.
- Cook eggs in a small pan to your desired doneness.
- Assemble the burgers by placing a lettuce leaf on a plate, followed by the burger patty, bacon, egg, and sautéed mushrooms and peppers.
