Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix ground bison with salt, pepper, onion, garlic, mustard, thyme, and olive oil until combined.
- Form the mixture into 3 or 4 patties, slightly thinner in the middle.
- Grease the grill grate and place the patties on the hot grill, cooking for 3-4 minutes on each side.
- Cook to desired temperature, with medium-rare at 140F-145F, and let rest for 10 minutes covered in foil.
- For the Smoky Aioli, mix mayo, mustard, and smoked paprika in a small bowl.
- Assemble the burgers with desired toppings.
