Ingredients

Aioli

  • cup mayonnaise
  • 1 ½ teaspoons sriracha sauce

Burger

  • 1 lb ground bison
  • 2 cloves garlic
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 4 rings pineapple
  • 4 rings red onion
  • 4 spears dill pickle
  • 4 leaves lettuce or gluten-free buns

Instructions

  1. Preheat the grill to high heat.
  2. Combine ground bison, minced garlic, sea salt, and black pepper in a bowl and mix gently.
  3. Divide the mixture into 4 pieces and shape into patties about ¼-inch thick.
  4. Grill the patties over direct heat for 4-5 minutes until browned, then flip and cook for another 5-6 minutes.
  5. Grill the pineapple rings over direct heat until cooked, timing will depend on thickness.
  6. Remove burgers and pineapple from the grill and let them rest for 5 minutes.
  7. Mix mayonnaise and sriracha sauce in a small bowl.
  8. Assemble the burgers by placing each patty on a lettuce wrap or gluten-free bun, topping with pineapple, red onion, and sriracha aioli.
  9. Serve with dill pickle spears.
