Bacon, Blue Cheese and BBQ Bison Burgers

Ingredients

  • 2 lbs ground bison meat
  • ½ bottle Stubb’s Sticky Sweet Bar-B-Q Sauce
  • ½ jar Stubb’s Steak Rub
  • 1 tbsp apple cider vinegar
  • dash Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • 1 medium red onion
  • 8 oz blue cheese
  • 8 slices bacon, pre-cooked
  • 1 jar high quality dill pickles
  • 8 pieces hamburger buns

Instructions

  1. Mix the bison meat with minced garlic, butter, and Worcestershire sauce.
  2. Form the mixture into 8 burgers and create an indentation in the middle of each.
  3. Coat each burger with blue cheese.
  4. Prepare the grill for medium heat, creating direct and indirect zones.
  5. Slice the onion and create a sealed foil packet with onions, cider vinegar, and BBQ sauce.
  6. Oil the grill grates and place burgers and hobo packet on direct heat.
  7. Cook burgers until the internal temperature reaches 140 degrees, flipping halfway.
  8. Add cheese to the burgers as they finish cooking.
  9. Toast the buns on the indirect side of the grill.
  10. Assemble the burgers with bacon, pickles, BBQ sauce, and caramelized onions.
