California-Style Bison Burger

Instructions
- Preheat the grill or grill pan to medium-high heat.
- Divide the bison into three portions and form into patties about 3½ to 4 inches wide. Season with salt and pepper.
- Cook the patties on the grill for about 3 minutes on each side until done to your liking. Add cheese to each patty and cook for an additional 1-2 minutes until melted.
- Toast the buns on the grill for about 1 minute on each side.
- Spread Dijon mustard on both sides of the buns. Layer with lettuce, onion, avocado, bison patty, tomato, and sprouts. Top with the other half of the bun.
- Serve with chips.
