Ingredients

The main ingredients

  • 1 lb Flank steak (sliced thinly against the grain)
  • 2 tbsp Olive oil (divided in half)
  • 1 tbsp Lime juice
  • 1 tbsp Taco seasoning
  • 1 recipe Cilantro Lime Cauliflower Rice

The garnishes

  • 4 medium Roma tomatoes (seeded and diced)
  • ¼ large Red onion (diced)
  • 1 medium Avocado (sliced)
  • ¼ cup Sour cream (omit for dairy-free or paleo)

Instructions

  1. Make the cilantro lime cauliflower rice according to the recipe.
  2. In a large bowl, toss the steak with 1 tablespoon of olive oil, lime juice, and taco seasoning.
  3. Heat the remaining tablespoon of oil in a large skillet over medium-high heat until shimmering.
  4. Add the steak in a single layer and cook for 2-3 minutes per side until browned.
  5. Divide the cauliflower rice into 4 bowls, 1 cup each, and top with steak, tomatoes, onions, avocado, and sour cream.
