Ingredients

Base Ingredients

  • 3 cups shredded romaine lettuce
  • 2 cups Cilantro Lime Rice or brown rice
  • 2 cups Vegan Carnitas
  • 1 cup black beans
  • 1 cup fajita veggies

Toppings

  • 1 cup guacamole
  • 1 cup corn salad
  • 1 cup fresh salsa or pico de gallo

Optional Garnishes

  • to taste sour cream
  • to taste jalapeño
  • to taste vegan cheese sauce or dairy-free shredded cheese
  • to taste hot sauce

Instructions

  1. Start by layering ¾ cup of shredded lettuce, ½ cup of rice, and ½ cup of vegan carnitas at the bottom of each bowl.
  2. Add ¼ cup of black beans and ¼ cup of fajita veggies on top.
  3. Finish by topping each bowl with ¼ cup of guacamole, ¼ cup of corn salad, and ¼ cup of salsa.
  4. Add any additional garnishes you prefer and enjoy!
